TO SOAK OR NOT TO SOAK—IT’S A NUTTY QUESTION

TO SOAK OR NOT TO SOAK—IT'S A NUTTY QUESTION

Posted by Zel Allen's nutgourmet on September 7, 2011

I've often been asked whether it's necessary to soak nuts before eating them. Is soaking a waste of time or does the process offer nutritional benefits? I thought it would be helpful to provide both views and let people decide what works best for them.

Frequently raw fooders soak nuts in preparation for assembling a recipe like nut milk, nut butter, or nut cheese. Soaking makes nuts softer and creamier and enhances the texture of many raw dishes. I've provided a section in my cookbook, The Nut Gourmet, that covers soaking nuts, but this fun and informative blog gives me the opportunity to share the simple process with anyone searching for this information on the internet.

Soaking nuts offers several health benefits. The simple process of soaking nuts for several hours works like magic to increase their antioxidant and phytochemical capacity because soaking releases some enzyme inhibitors.

Some people have difficulty digesting nuts and eliminate them from their diet. They needn't miss out on the healthful benefits nuts offer because a few hours of soaking does wonders—Soaking is the prelude to the sprouting process and releases enzymes that inhibit the digestibility of nuts. Soaking nuts also helps to break down their macronutrients. Protein, fats, and carbohydrates are broken down into digestible components, turning protein into free flowing amino acids, fats into fatty acids, and carbohydrates into simple sugars, essentially predigesting them.

After soaking for several hours, nuts become very soft and lose their crunchiness. To return them to their natural crispness, dry them with paper towels or a kitchen towel and dehydrate them for several hours at a temperature between 110 and 115 degrees F. Alternatively, you can roast them in the oven. To preserve their valuable vitamin E and antioxidant flavonoid and polyphenol contents, place the nuts on a baking sheet and dry roast them at 150 to 170 degrees F. for 15 to 20 minutes. Transfer the nuts to a dish to cool, and taste their exceptional flavor and pleasantly crisp texture.

Not everyone has problems digesting nuts. For those who do, soaking is definitely helpful. However, soaking adds to extra steps before one can actually eat the nuts. In today's busy world, few of us are looking for extra processes in order to prepare our foods. I'm a from-scratch cook, but I, too, shun extra steps when they're not needed.

For most of us with the ability to digest nuts without difficulty, we can reap the multitude of health benefits of eating nuts raw or roasted without soaking. Mother Nature has made a perfect ready-to-eat food that's packaged in protective shells. Within those protective shells are a storehouse of minerals, heart healthy vitamin E, fiber, protein, and a mountain of antioxidants and phytochemicals. Nuts are a healthy, nutrient dense food that studies have shown to reduce the risk of heart disease when eaten in small quantities like one to two ounces daily. Fortunately for us busy folks, nut processors have also saved us the labor by shelling the nuts and putting them into convenient packages.

Nuts are freshly harvested in the fall and are so much tastier and moist than they are by the end of summer. For the holidays, I like to buy a variety of fresh nuts in the shell and put them in a bowl with several nutcrackers. Guests who visit my home during fall and winter have one nut-cracking good time and enjoy a heart-healthy, highly nutritious treat in the process.

Sharp Jabs Dominate Combative VP Debate

The vice-presidential nominees engaged in an animated and at times cutting debate Thursday, with Republican Rep. Paul Ryan delivering a biting critique of the Obama administration's response to violence in Libya and Iran's nuclear ambitions and Vice President Joe Biden attacking Republican budget-cutting and Medicare proposals.

The debate in Danville, Ky., the only planned onstage meeting between the two men, surfaced sharp differences over foreign policy, health care, the 2009 stimulus and other issues, stated in pointed language that marked a far-sharper exchange than displayed by the men at the top of the party tickets at a presidential debate last week.

Vice-presidential debates don't typically leave a big impact on elections, but this one came at an unusually unsettled moment in the campaign, with Republican presidential nominee Mitt Romney surging to a lead in many national polls and both parties wondering if his rise would be sustained.

Mr. Romney's strong debate performance last week not only improved his image among voters, polls showed, but brought his campaign new donors and volunteers.

It also raised the pressure on Mr. Biden to do well at Thursday's event in order to help his ticket regain momentum.

Mr. Biden often broke into a wide grin as his opponent spoke, and he showed a fighting spirit that contrasted with the unenergetic performance from Mr. Obama last week. At one, he called Mr. Ryan's comments on Libya 'a bunch of malarkey' and his critique of Mr. Obama's Iran policy 'a bunch of stuff.' Mr. Ryan answered with a series of steady critiques on Obama administration policy.

Messrs. Ryan and Romney clashed early in the debate over a question from moderator Martha Raddatz of ABC News about the Sept. 11 attack at the U.S. consulate in Benghazi, Libya, that killed U.S. Ambassador Christopher Stevens and three other Americans.

Mr. Ryan complained that it took President Barack Obama two weeks to acknowledge the assault was a terrorist attack, and said the administration failed to provide adequate security for diplomatic personnel in Libya.

He then launched into a harsh assessment of the administration's foreign policy.

'It makes us look more weak,' Mr. Ryan said after charging the administration failed to stand up for Iranian dissidents in 2009. 'It projects weakness.'

Mr. Biden defended the administration response in Libya, saying officials based shifting public statements on intelligence assessments available at the time.

Mr. Biden also attempted to turn the tables on Mr. Ryan by saying the Republicans in Congress cut $300 million from diplomatic security, an attack begun this week by congressional Democrats.

Mr. Biden and Mr. Ryan continued the battle between the two tickets over differences in their approaches to Iran and Israel. Mr. Ryan pressed the Republican case that the Obama administration has distanced itself from Israel, putting space between the White House and Israeli Prime Minister Benjamin Netanyahu.

That, Mr. Ryan said, sent a signal to Iran's leaders that the international community was divided on Tehran's nuclear program. He also complained that the Obama administration resisted some sanctions against Iran and granted 'waivers' to the sanctions.

Mr. Biden challenged Mr. Ryan's arguments, saying the Obama administration led the toughest sanctions regime that had ever been instituted against Iran and had united the world behind opposition to the nuclear program.

Iran denies U.S. and allied charges that it is trying to develop a nuclear program.

Mr. Biden didn't explain the origin of Mr. Ryan's complaint about waivers to the sanctions. Under the sanctions laws, the U.S. would have to impose penalties against countries that continue to purchase Iranian oil. But to avoid punishing allies, the Obama administration negotiated with governments around the world to reduce their purchases of Iranian oil, then approved waivers to the sanctions.

The sanctions are widely credited with having a deep economic effect on Iran, but have so far not persuaded the country's rulers to relinquish their nuclear program, which they claim is intended for peaceful purposes.

While the two men are a generation apart─Mr. Biden is 69, Mr. Ryan is 42─the debate featured two men with similarities. Both were elected to Congress at a young age, Mr. Biden to the Senate at 29 and Mr. Ryan to the House at 28. Both have a deep knowledge of federal policy, which they put on display.

Mr. Biden spent 36 years in the Senate, rising to chairman of the Foreign Relations Committee before joining Mr. Obama's 2008 ticket. Mr. Ryan is a 14-year veteran of the House and chairman of the Budget Committee.

As the debate turned to the economy, Mr. Biden quickly raised Mr. Romney's secretly recorded comments at a campaign fundraiser that 47% of the country pays no federal taxes and sees themselves as victims who will never take personal responsibility. Democrats were dismayed that Mr. Obama had made no mention of those comments in his debate with Mr. Romney last week.

Mr. Biden said many of the people who receive government benefits are people like his parents, whom he said paid a higher income-tax rate than does Mr. Romney. The vice president said that instead of signing pledges by an anti-tax advocacy group not to raise taxes on anyone, including the highest earners, Messrs. Romney and Ryan should be signing a pledge to help the middle class.

Mr. Ryan used the moment to try to soften Mr. Romney's public image, telling the story of how Mr. Romney had offered to pay college expenses for a family whose two sons were injured in a car crash. He said Mr. Romney had given 30% of his income to charity. 'Mitt Romney's a good man. He cares about 100% of Americans in this country.''

In discussing the '47%' comment, Mr. Ryan also cited the vice president's widely known penchant for gaffes and misstatements. 'I think the vice president knows sometimes the words don't come out of your mouth the right way,' he said.

Mr. Biden laughed in recognition of his own verbal miscues, but then turned serious, saying that if anyone thought that Mr. Romney was simply misstating his own views, then 'I've got a bridge to sell you.'

The pair engaged in a vigorous debate over Medicare, with Mr. Biden saying the Republican ticket would turn the health-are program into a voucher system. Mr. Romney has proposed having future retirees buy insurance in the private market or through Medicare, with the coverage subsidized by the federal government. Mr. Ryan replied that his program would save the Medicare program, which faces a fiscal crisis in a few years.

Ms. Raddatz, the moderator, referred to Mr. Romney's tax plan, which would cut income-tax rates by 20% for all tax brackets and aim while ending unspecified tax breaks in an attempt to avoid adding to the federal deficit. She pressed Mr. Ryan to list some of the deductions and loopholes Mr. Romney would eliminate, but Mr. Ryan did not offer details.

Mr. Ryan attacked the White House's 2009 economic stimulus package as ineffective, prompting Mr. Biden to note that Mr. Ryan had written him twice to request stimulus funding for his state. 'On two occasions…we advocated for constituents who were applying for grants,' Mr. Ryan said. 'We do that for all constituents.'

Mr. Biden replied: 'I love that. This is such a bad program, and he writes me a letter saying…saying…we need this stimulus─it will create growth and jobs.'

Dreamliner: The game changer for airlines

Dreamliner: The game changer for airlines

For many airlines, the new Boeing aircraft-the Dreamliner is a new tool of change for many  of them. As a result, many airlines are now taking delivery of the new high fuel-efficient airplane.

With jet fuel prices near record highs, the drive to conserve is stronger than ever.

The entire industry is hoping a switch from radar to GPS-based navigation will cut the time it takes both to reach cruising altitude and land a plane.

An American airline recently made headlines with its novel bid to buy an oil refinery, taking a more direct role in procuring fuel. But Delta and other airlines are experimenting with a number of other ways to cut costs.

The new jet is the first commercial airliner built using carbon fiber — a strong, lightweight, high-tech plastic — rather than the typical aluminum skin. It is quieter and uses about 20 percent less fuel than a comparably sized aluminum aircraft.

The Chief Executive Officer of United Airlines, Jeff  Smisek said, the 787s have an extended range and its cabin have bigger windows and larger overhead compartments. For improved passenger comfort, the humidity can be controlled and the air pressure during flights will be equivalent to an altitude of 6,000 feet instead of the conventional 8,000 feet.

"Customers will love flying in them," he said. "So it's good for us and great for the customer."

United Continental will be the first North American carrier to receive the 787s.

He said 787s will mostly replace existing aircraft instead of adding capacity because, "I don't see us growing our mainline fleet in any significant way under these current conditions."

Airlines have ordered more than 800 of the planes that will compete with the Airbus A350. United Continental has ordered 25 of the Airbus aircraft.

Throughout the past year's stuttering recovery, oil prices have constantly loomed in the shadows. They now seem to be about to subvert the recovery agenda. The Middle East is unlikely to return to normality quickly and, although there is no real shortage of oil yet, there is sufficient nervousness – and speculators with an interest in inflated prices – to push the level unpredictably.

Jet fuel prices are close to the tipping point for airline profitability and, while limited fuel surcharges may hold, it is doubtful the market is sufficiently resilient to absorb much more in the way of higher fares.

The double impact will translate quickly to the bottom line. Price increases unfortunately stimulate an almost inverse correlation relationship, where costs increase on one side and yields soften as discretionary spending slows.

As a result of cost cutting measure, world's biggest airline, United Airlines last week in far away Chicago, announced that it would deploy the aircraft to Lagos from its hub in Houston beginning January 7, 2013.

The airline will be the second airline after Ethiopia Airline to operate the aircraft type to Nigeria, which is considered a feat for the nation.

Ethiopia become the second country after Japan to take delivery of the Boeing 787 Dreamliner.

Ethiopian Airlines has bought 10 of Boeing's flagship aircraft, which are built from lightweight material, rather than aluminium, to save fuel.

Speaking to The Guardian in Chicago last week at Willis Tower, the airline's head office at United's international media day to highlight the stride the carrier had taken since its merger with Continental Airlines two years ago, Smisek said in addition to the previously-announced service from its Denver hub to Tokyo Narita, starting March 31, 2013, the airline will operate nonstop 787 service five days a week between its Houston hub and Lagos, Nigeria, beginning Jan. 7, 2013.

United will also operate daily, nonstop 787 service between its Los Angeles hub and its Narita hub, beginning Jan. 3, 2013, and Los Angeles to Shanghai, beginning March 30, 2013"

He further disclosed that United will also operate daily, nonstop 787 service from its Houston hub to Amsterdam and London Heathrow on a temporary basis, adding that Houston to Amsterdam service begins Dec. 4, 2012, and Houston to London Heathrow service begins Feb. 4, 2013.

According to him, the 787 is the right aircraft for these routes because of its many passenger-friendly amenities and superior operating economics, stressing that, "With 50 787s on order, we look forward to the many new route opportunities that will become available to United and our customers in the future."

Configured with 36 seats in United BusinessFirst, 72 seats in United Economy Plus and 111 seats in United Economy, the Dreamliner will revolutionize the flying experience for United customers and crews while delivering unprecedented operating efficiency, comfort and lower emissions. Customers will experience greater comfort with improved lighting, bigger windows, larger overhead bins, lower cabin altitude and enhanced ventilation systems, among other passenger-friendly features.
